can you taste the freshness, or not?

As many of you may know, our company has an ironclad rule of ‘shipping on the day of roasting’. Therefore, even if you specify a delivery date, we may not be able to meet your request.

The other day, I asked a customer, “The roasting is full and we can't deliver on the specified date. We can roast and ship it the next day.” Then he said, “I don’t understand why you were so particular about freshness.” Also, he said, “Even if it's a day old, I can't tell the difference in taste for myself. Aren't there fewer people who know?”

"I'll be drinking it for 2-3 weeks after I buy it anyway, so there's no point in taking it seriously.”

Certainly it's a lot easier to work with beans that are old, and we can increase the amount we ship. There are many shops that sell coffee a week or two weeks after roasting, in that way, there is much less loss of beans and a lower cost of production.

As he pointed out, there may be some customers who do not understand the difference in taste.

but since ‘It's obvious to some people.’... we can't compromise on that!

In addition, we are worried that the freshness of the beans will vary depending on the type of beans we ship that day.

If it happens that ‘A's coffee beans are freshly roasted, but B's beans are a day old,’ it will be unfair.

If I compare it to a fast food restaurant...

It’s like, “I ordered fries and they were squishy. The last time I ordered it, it was freshly fried and crispy.”

Such unfairness like this will never happen in our company.

Let's take a look at how the flavor has changed since the roasting date.

[Roasting day]

It has a low aroma and fullness, with a moderate roundness. It has a clear taste.

[After roasting, the next day and the day after that]

This is the best time when the richness of the aroma. It also increases the richness and mellowness. I (the store manager) recommend it best to drink.

[Three days after roasting]

While mellowness is maintained, the aroma slowly fades away.


The change in taste is only possible if the following conditions.

  1. When purchased as roasted beans and ground just before extraction.

  2. If the product has been kept tightly sealed (or refrigerated during the summer) after arrival.

  3. In the case of careful roasting over time (short roasting or miscellaneous roasting does not produce a mellowing effect).

By shipping on the day of roasting, we want you to enjoy the ‘change of taste’ at home.

If you want to pursue the flavor of the day of roasting, we recommend that you purchase the fresh beans and roast them at home.

We don't want to compromise on anything for the best drink! It's a lot of work because there are so many other things to do, but...
