Healthy coffee with a hand roaster [and why it helps prevent disease]

In the previous article, we talked about tips for surviving the new pneumonia coronavirus countermeasures (Part 2) with as little as possible.

This time, I'd like to talk about ‘hand-roasted (hand-net roasted) coffee’ which is easy to do using the ginkgo roaster.

Some of you may be thinking that way.

Actually, it's pretty simple.

(1) Add the fresh coffee beans to the ginkgo roaster.

(2) Shake it over the fire.

That's it!

It's easy, isn't it?

Usually it takes about 10-15 minutes to roast, but it can take just 3 minutes at the earliest.

If the roasting time is too short, the acidity and bitterness will be strong and it will lack mellowness.

But some people say it tastes the best....

They say different people have different tastes.

Of course, when you start to pursue the best roasting conditions and reproduction of the taste, the goal suddenly seems far away.

I've been roasting for more than 20 years, but there are still new discoveries to be made and I realize that I'm still in my infancy.

The taste changes with roasting rather than extraction.

As we all know, the taste of coffee changes depending on the extraction method.

It's fun to use the same beans, but the taste changes depending on when they are ground and how they are extracted.

However, ‘roasting’ is even more influential than that.

For example, when it is roasted...

  • If the roasting time is 10 seconds different for the same bean, the taste and aroma will obviously change.

  • If it's 30 seconds different, everyone says like, "Hmm. Did you change the type of beans? The aroma and richness are totally different! “ 

Not only time, but also the type of fire, the heat, the distance from the fire, the temperature, humidity, and the presence or absence of wind will affect it.

It's interesting that even the same beans can become completely different by the subtle difference in roasting level.

Why it becomes a Healthy Coffee (Disease Prevention)

If you're just starting out with hand roasting, you can roast a healthy coffee even if you don't realize it.

The reason for this is that the beans are not roasted evenly and there is a mixture of light roasted and dark roasted beans. This lack of uniformity doesn’t mean not to taste bad.

Rather, even though they are single origin beans, they are a blend of light and dark roasted, giving them a deep flavour.

dark roasted beans: Promotes blood circulation, improves dyslipidaemia and prevents arteriosclerosis and cardiovascular disease, reduces the incidence of coronary artery disease, cerebral haemorrhage and cerebral infarction.

light roasted beans: They contain a lot of chlorogenic acid (polyphenol), and are effective in preventing type 2 diabetes, anti-aging and dieting.

If you're worried about diabetes, make light roasts mainly and a slightly dark roasts mixed in.

If you are worried about blood vessel clogging such as cerebrovascular disease, make dark roasts mainly and a slightly light roasts mixed in.

You can also make dark and light roasts separately and then blend them to your liking...

You can do a lot of things with it!

When you roast with a ginkgo roaster, you can see how the beans change, so it's a good way to learn about roasting.

When you start roasting, be careful to choose the fresh beans.

  1. Choose a store that has access to as many new raw beans as possible (and a fast turnover) to avoid stale, mould beans.

  2. It is natural that "if you roast good fresh beans, you can make good coffee". If you're going to work hard at roasting, make sure you get high quality fresh beans.

  3. If you want a really healthy coffee, don't hesitate to choose organic one(certified organic and pesticide-free).

You can avoid harmful pesticides and fumigation if you buy from a store that is properly committed to organic.
